Things to notice:
No refrigeration.
Lax regulation.
Head to toe availability (nothing goes to waste).
Everything is fresh (it has to be).
Diverse selection.
High competition.

This is the free market at work. Western society could learn a few things here. Oh, and you don't have near as much meat borne illness as you do in the USA.
