Yogurt, a freewrite

I've gotten quite good at making yogurt.

Yogurt sounds very easy to make and it is: scald some milk, let it cool to body temp, add a small amount of the last batch of yogurt, and put it somewhere warm to culture for 12 to 24 hours depending on the level of tanginess you like.

I'm a neat and clean freak in the kitchen. I was in the restaurant business for 30 years, a kitchen person (no way would I ever make it as a server) and my work space was kept so clean that if I stepped away from my bench for a moment, someone else would move in because they thought I was done and gone for the day.

Back to making yogurt. Sounds so simple! But it is hard to make without also making a big mess. Milk rings under the jars I put it in to culture, milk dripping from ladles as I carry them to the sink. Milk dribbling down the side of the milk jar as I pour it into the pot to scald. Way too many pots, ladles, spoons, racks and jars to clean.

It has been my goal to get it all done without a single drop of milk anywhere undesirable and only one pot and one ladle to clean. I haven't pulled that off yet, but I am getting better at it.

I'm a messy cook. Not gonna say more than that. Just, my kitchen might pass inspection for invisible germs, but the rest... (see previous comments on hoarding, and add to that, um, laziness? inertia? a sense of futility? apathy?)
Now I have to get out of the house rather than face my messy countertop, cluttered as it is... not gonna photograph this!!
LOL!! The photo doesn't even begin to capture the clutter!!! I feel better about myself somehow.

My grandma used to make cottage cheese in a cloth sack strung up from a clothesline, dripping into a bucket below... never made yogurt. And I have all these dairy allergies, and soy or coconut or almond alternatives all have been gross. *I miss butter! I miss ice cream! and cheese--glorious cheese!

Haha, this is she this time! Stacie D 😊 But my husband and I take turns curating. I have often thought we should sign which one is which under the comments, it might make it easier to reply! haha I have worked hard over the years to stay as decluttered as I can. It always causes me so much stress right under the surface. It really helped when we adapted a minimalist lifestyle while we were living nomadic. I hear you on the dairy conundrum. We didn't start out with allergies, just chasing a healthier lifestyle, but we have really stayed away from store bought alternatives because they have so many ingredients! I feel like the dairy version has got to be healthier haha. I did start making our own cashew cheeses and sour creams. I'm venturing over to ice creams as well. Not because the dairy free versions were gross...there are some really, really good ones out there, but because of all the sugar. I haven't even tried with butter yet though! haha

I used to have it in Thailand all the years I lived there every morning with a bowl of fruit

That is how I start nearly every morning here! Blueberries, strawberries, banana or figs. I also have a nice big dollop of raw local honey. I'm hoping this combo is health enhancing. So far so good! Thanks for the visit!

I am very sad for you then! It's such a lovely food for me, very comforting. I eat quite a bit of dairy actually, maybe a bit too much.

Don't worry about that, I have other things to make me happy! Haha

I started making yogurt a few years back. A very satisfying job!

And I'm with you, keep the kitchen area spotless! I clean up as I go, so much nicer to work in.

So much less work too! I'm all for getting cooking over as quickly as possible. The clean up as well. More time for fun.
