Greetings, everyone! Today I'm going to show you the simple salad that I eat everyday. I make a big bowl full and it is very filling and delicious. It is based off a salad that my sister made for me last summer. The ingredients are flexible and you can adjust them to what you have available.

Ingredients

• 2 handfuls of baby spinach
• 1-2 apples, diced
• 2-3 plum tomatoes, diced
• 1 handful of strawberries, halved
• ½ cucumber, sliced
• 1 handful of slivered almonds or walnuts
• dressing of your choice

Toss all the ingredients in a big bowl and there you have it! I'm always looking for ways to add something new. The other day I found some alfalfa microgreens at the store and tossed those in as well. They are rich in vitamin A and are 40% chlorophyll and 60% essential nutrients like amino acids and proteins to name a few.
Have you ever made your salad or just got back home from shopping for ingredients and realize you were out of salad dressing? Or did you ever want to make some dressing yourself?
I had no choice. Here in Mexico, it was hard for me to find my favorite, balsamic vinaigrette, unless I went to Walmart but that's over an hour away. So, with limited ingredients, I decided to make my own. Here is the recipe.

You will need:
• 1 sealable jar
• measuring spoons

Ingredients
• ¾ cup olive oil
• ¼ cup balsamic vinegar (apple cider will work)
• 1 tablespoon dijon mustard (regular kind works too)
• 1 teaspoon granulated garlic
• 1 tablespoon onion powder
• 1 tablespoon Italian seasoning
• 1 teaspoon sugar
• ¼ teaspoon black pepper
• ½ teaspoon salt
Optional ingredient:
• 1 teaspoon maple syrup

Put all the ingredients into the jar and close it tightly. Now, shake it like a Polaroid! And there you have it. You can store it in the refrigerator and, if you really like it (and the salad), it will be gone before you even have to worry about it going bad. I don't actually know how long it keeps because I always finish mine within a matter of days. It tastes delicious even with the substituted ingredients!

Simple and delicious - can't beat an easy salad! I do love nuts in salad too. The other day I had one with sliced peaches and macadamia nuts, with a spinach base.

Oh that does sound delicious! I don't think I've eaten macadamia nuts since I went to Hawaii.
