SEC-S20W2 | 1st Course: Hot Liquid and Solid Starters.

Greetings and welcome to my blog. Today am very glad to participate in the class and I must say I’ve learnt new things in relation to my culinary journey.

For example I thought that all there was to a meal was three course meal, here I am hearing of a four course and a five course meal and even starters for the first time. Thanks for the added knowledge.

Of the two types of hot starters mentioned, which is your favorite? Tell us.

Now I’ve gotten to know about starters, the amazing thing is that I’ve always had them but I didn’t even know that they are called starters.

Between the solid starters and the hot liquid starters, I must say that I love the hot liquid starters. This is because am used to eating a lot of delicious soups and stews.

I love soups a lot and I tell my friends that my body will be shaking when I don’t get to eat soup almost everyday. I also love stews too and I get to eat lots of them especially vegetable stews. So I love hot liquid starters more than solid starters and of the two hot starters, soups are my favorite.

Have you prepared a hot liquid or solid starter for a menu?

Today I’ve prepared a hot liquid starter and it’s a stew; A fresh tomato and smoked fish stew. Join me as I show you how I did it.

The ingredients used includes;

  • smoked fish
  • Fresh tomatoes
  • Fresh peppers
  • Onions bulbs
  • Crayfish
  • Salt and spices
  • Groundnut oil and
  • Tomato paste

Procedures

  • I washed the fresh tomatoes, pepper and crayfish in water and blended them with a manual blender.

  • I poured the blended mixture into the pot and added tomato paste and allowed to boil and dry up the water before adding fresh water to the mixture.

  • I allowed the stew to boil for about ten minutes and then added small groundnut oil, salt, spices and maggi cubes and still allowed to boil for a while until the sour taste evaporates.
    I proceeded to add the smoked fish and sliced onions and allowed it to continue boiling for another five minutes and I stirred to serve.

The stew is ready to be eaten.

What cooking method did you use to prepare your starter?

I used the moist heat method to prepare my hot liquid starter. I had to boil it for a while to give the desired texture and taste and it came out beautiful.

Which main dish and which dessert would you pair with the starter you just prepared? Imagine a 3-course menu that goes with your starter.

Starter; Fresh tomatoes stew
Main dish; Boiled white rice and boiled yam would go perfectly with this as a main dish.
Dessert; A cup of fresh orange juice.
