A SIMPLE LEAF-LESS SALAD IDEA
Growing your own and eating what you grow can require some creativity.
Often, we work with the harvest. Whatever is maturing is what we are eating, and it's what we are working with to create our meal plans for the day. Today, we enjoyed a nice leaf-less salad!

WHY NO LEAFS?
At the grocery store, everything is always in season. Carrots, Iceberg Lettuce, Tomatoes, and Bell Peppers seem to be ripe all year round. In the garden, though, this is not the case. As the heat of summer comes on, many salad greens will either wilt or bolt. Eventually, the options may be very limited.
Here, we like to treat limitations like opportunities, so we just roll with it. Today we used chopped cucumbers as the base for our salad instead of lettuce or some other salad green. Then we just added chopped Chinese Red Noodle Beans and Cherry Tomatoes, topping it off with some Chia seeds. (The Chia seeds we not homegrown.) It was a simple dish that tasted like a fantastic salad, and all without requiring any leafy greens. You should give it a try sometime!

Not even close.
What a salad? It is just a mix of different veggies, fruit, nuts, leftover cooked meat (BBQ chicken works). We have various salads. We have clean out the fridge salads, walk through the garden salads, egg salads, chicken and fish salads. And no one ever complains about too many salads!
Oh yeah! I remember cleaning out the fridge salads!

Looks super delicious! In this tropical climate, I believe if I planned right, I actually could have every ingredient at all times. Not there yet. Lol!

Hmmmmm...yummmmy. eating green is eating well. And i feel nothing tastes better than what comes from your garden. I better get myself into gardening. I love watching stuffs grow and enjoying my work. Bon apetite seniore

Basically clay that is shaped like an animal, and then the chia seeds are planted on it to make "wool."
