011 - QUICK RECIPE - Keto/Paleo Granola
Quick Recipe: Keto & Paleo Friendly Granola
I absolutely LOVE this granola! It is 100% customizable! You can add which seeds and nuts you enjoy the most and make it your own!
Must Have Ingredients
- 112 g Grass-Fed Butter (8 tbsp), melted
- 1 Large Egg
- 2 tbsp Maple Extract or 4 tbsp of Monk Fruit Sweetened Maple Syrup (To make Paleo, add real maple syrup)
- 12-15g of Swerve (To make Paleo, add more maple syrup)
- 56 g Almond Flour
Customizable Ingredients
The fun part! Mix and match what you want in your granola. Try to keep it in between 400-425 grams total. Here are a few options I’ve used!
- Sliced Almonds
- Walnuts, chopped
- Pecans, chopped
- Pine Nuts
- Macadamia Nuts
- Sunflower Seeds
- Pumpkin Seeds
- Hemp Hearts
- Chia Seeds
- Flaxseed
- Coconut Flakes, torn up a little smaller (MY FAVORITE)
Instructions
1. Preheat oven to 350°F. Then line a baking pan with parchment paper.
2. Mix all ingredients thoroughly. Make sure the butter has cooled down a bit before mixing it in. Then pour and spread onto the parchment lined pan.
3. Bake for 15 minutes.
4. Remove from oven and toss around thoroughly. Put back in the oven bake for another 7 minutes.
5. Repeat step 4 four more times. This is VERY important. If you don’t continuously toss the granola around, they will burn! Doing this ensures the granola cooks evenly. Nuts are expensive. Don’t waste your nuts!
6. Wait for it to cool down completely then store in an airtight container in the fridge. This is a pretty big batch, but it never lasts longer than a week in my house. 😊
Total calories will depend on what ingredients used, so do your due diligence and add it to your calorie calculator and track!
