Very good meal setup. ( I am a trainer and coach) I would also mention that you can substitute the beaf with chicken and substitute the potatoes with rice or pasta. The portion and array of veggies can grow to keep insulin levels a little lower from the pasta or rice. You can also choose brown rice or wheat pasta to get a similar result.
I would also like to add that I think fruits are missing from many meals. Sugar has gotten a bad rap, but the public needs to understand it's refined sugar that has no fiber to balance the insulin spike that is the the problem. The high spike in the insulin is the issue! When you eat fruits it has the fiber built into it and not to mention all the other vitamins and minerals. SO DON'T FEAR FRUITS! Not to mention some of your best workout energy comes from fruits!!!
Balance your meals with carbs proteins fats and sugars! Just learn how to deliver them!!!
Add nuts for good solid plant fat.
Fat is necessary for proper hormone balance!!!
Don't eat fat free anything!
