Tomato salsa Recipes

A zingy dip, which is simple to make. Try it with toasted pitta bread.

Prep time: 10 minutes

3 medium ripe tomatoes
1 tablespoon fresh coriander leaves, chopped
1 garlic clove, crushed
Juice of half a lemon
Ground black pepper
1 small red onion, peeled and roughly chopped
RECIPE:
1 Wash the tomatoes and cut into quarters.
2 Place all the ingredients in a food processor and blend to make a slightly chunky salsa.
3 Serve at once, or cover with cling film and keep it in the fridge until you need it.
