A new tradition: Making holiday cookies

I am a fan of chocolate chip cookies, aside from the fact that it's so easy to whip that goodie snack, it's also nice paired with coffee. For the past months, I have been exploring different pastries, sweets, and breads using my mini oven. From baking chocolate cookies, I have tried and luckily able to bake cinnamon rolls, cheesecake, cupcakes, banana bread, carrot cake, and sausage rolls. I'll write a post about those too, soon. But today, I'd like to share these treats I've baked for the Christmas holidays. There's not much of a Christmas-y touch on these cookies, but their colors kinda fit the season. White, red, and green always reminds me Christmas. How about you? Do share it with me, if you reach this part of my post.

DOUGH MAKING

It took me 3 hours to prepare the dough for all the cookie flavors. I thought it would be easy since I have already wrote down the recipe and familiarize myself with the ingredients. Even so, I did enjoy my time being confused.

This is my second time making this cookie dough, I failed the first time because I put so little of the matcha powder and the dough didn't look so green. This one easily became one of my favorite cookie flavors because the matcha balances the sweetness of the white chocolate perfectly.

I've always thought that there's nothing special with red velvet pastries, the cream cheese filling is responsible for my love for red velvet crinkles. Since I'm making oreo cheesecake cookies too, I had to find an alternative for the cream cheese. And they always say that you can never go wrong with chocolate chips, lol. This turned out fine since the recipe requires cocoa powder, it made the cookies have that chocolate-y goodness.

Last, but definitely not the least! I had to read the recipe again and again since this did not require egg, which was odd for me. I have never encountered a baked good that did not need eggs. I've read that eggs are responsible for the structure of what you're baking, I was so hesitant when I was about to put the scoops of cookie dough in the oven because I thought it will just remain a ball of dough after baking. Gladly, it turned out fine too.

Yay, here's the finished product of my almost 4 hours in the kitchen. I was able to bake a lot for my family ( I had more than enough so I put some dough in the fridge so I can bake more on the next days ). Cookies are better served fresh from the oven. Since I have enjoyed these treats so much, I have decided to do this yearly from now on. I hope you're enjoying your time too, despite being stuck in this pandemic. Merry Christmas!
