History of some cuisines that has fascinating stories

Dear friends,
How are you all? I hope you all are fit and fine. Before I begin my writing;
I would love to welcome you all to my page.

Earlier, when I shared several cuisines, and at that time, I also shared the history of those cookeries because I love to know the origin of those delicacies.

So today, I thought to share the origin of some cuisines because some fascinating facts or stories lie behind those delicacies.

Firstly, I would like to share the origin of 'Shahi Tukda.'

Sahi Tukda

It is a dessert that is created with bread.
An alluring story is concealed behind this desert;
and it is believed that the desert first began at the time of the Mughal Empire.

The story goes like that, in the 1600 century, the Mughal emperor king 'Babur' and his Troops were on one of their quests.

To wanted to take some rest, and hence they were precluded by 'The river Nile';
the adjoining village to have some food. The ecstatic villagers called the local chef to prepare a meal for the royalty.

The name of the chef was "Umm Ali."

When the chef had glimpsed, there was nothing much left for making anything;
He carried some stuffy slices of loaves of bread with the help of some cream, milk, sugar, and nuts; he lashed a dessert;
Which had the starving visitors licking their fingers.

Later the bread pudding transited across Middle-East Asia;
and evolved into a popular dish.
Shahi Tukda, as the title implies, signifies The Royal Dessert.
That is believed to be the history behind the formation of Sahi Tukda.



Pulao/Pilaf/Pilau


It is considered that Pilaf or Pulao is inherent in the Muslim religion, and some claim that delicacy was foremost formed in the Persian kitchen by using raisins and various fruits. It was not part of India at the beginning.

Some believe that the chef (D'oeuvr) of Persian kitchens;
foremost made goat and sheep pulao.

After that, it transformed into an elegant dish as it traveled from the campfires of set migrating herders to the courts of the caliphs. The styles of making pulao are different;

There are five most popular techniques of making pulao since the 15th century.

But according to K.T Acharya, pulao is mentioned in Mahabharata. Whatever the story says, we get a very popular delicacy from our history, and now it has become a universal food and is popular almost around the world;
This cuisine is famous and known by various names.

In India, Basanti Pulao is also very recognized for its color and taste;
The lemon yellow delicacy can take away anyone's heart.



KULFI

Another popular dessert originated in Northern India in the 16th century under the Mughal emperor. Using ice and salt Mughals froze the thick milk by using pistachios and saffron into it;
and poured them inside the metal cones.

The meaning of Kulfi is covered cup, and the word comes from Persian. Now the shapes have been changed.
Various new versions of Kulfies were invented by chefs;
But at the start, the slow-cooked desert was different from nowadays.



CONCLUSION

During my study, I found that Persian is the embryo of different cuisines and brought several popular dishes to us. Among them, I highlighted three delicacies;

I am very excited to know the history of different foods. I especially enjoyed knowing the history of making Shahi Tukda and Polao. The history of food preparation has never really been thought of this way before. Thanks Didi for presenting some valuable information among us.
