Salvando a las Berenjenas // Saving the Eggplants
Yesterday I opened the fridge and discovered some sad and lonely eggplants that were close to being damaged. So I decided to make a cream or dip that my co-worker showed me. Of course I adapted the recipe to the situation and to what I had at home.

- Aceite
- Vinagre
- Sal
- Ajo y especias al gusto

Procedimiento
Todos los ingredientes y cantidades son al gusto.
Para esto tome las berenjenas y las unte con aceite, luego las puse directamente a la hornilla de la cocina con la llama muy bajita, dándole vueltas cada tanto. Tener cuidado porque se pueden prender en fuego. Una vez que estén quemadas de forma pareja por fuera las retiramos del fuego.
Procedure
All ingredients and quantities are to taste.
To do this, take the eggplants and spread them with oil, then put them directly on the stove with a very low flame, turning it over from time to time. Be careful because they can catch fire. Once they are evenly burned on the outside we remove them from the fire.
Esperamos que se enfríen un poco pero estando aún calientes las abrimos y sacamos todo la pulpa que tienen dentro y lo pasamos a un procesador de alimentos. Mucho cuidado de no quemarse y que no caiga ninguna parte quemada.( yo le agrego un trocito muy pequeño para intensificar el sabor ahumado).
Ahora que ya hemos sacado toda la pulpa, agregamos sal y un poco de limón o vinagre para que no se pongan negras, también pueden colocar un poco de ajo si gustan (No le puse).
We wait for them to cool down a bit but while they are still hot we open them and take out all the pulp they have inside and pass it to a food processor. Be very careful not to burn yourself and not to drop any of the burned parts (I add a very small piece to intensify the smoky flavor).
Now that we have removed all the pulp, we add salt and a little lemon or vinegar so that they don't turn black, you can also add a little garlic if you like (I didn't put it in).

Then we process it until it forms a homogeneous cream, to finish add homemade mayonnaise and mix until it is uniform.
Ready, we have a delicious cream or dip that we can spread on bread, cassava, crackers, doritos or whatever you want and save the eggplants from a sad and cold death in the fridge.
