Hello SteemFood pips! We had a very nice dish last episode called Maruya or Filipino Banana Fritters. As I've said before, Maruya is one of the best Filipino delicacies and for today we will have another popular Filipino dish. Our menu for today is what we call "PALITAW" or STICKY RICE DUMPLINGS WITH COCONUT. Palitaw is a sweet rice cake usually serve as a snack. It is usually small and flat rice cake made of stick rice or what we call "malagkit" here in the Philippines. So, what are we waiting for? Let's begin cooking now!


Ingredients


  • 1/2 cup sugar
  • 1 box eden cheese 165 grams
  • 1 1/2 cups of water
  • 2 cups glutinous rice flour
  • 3 cups of grated coconut

Let's check out the Procedures


Step 1

In a clean bowl, pour 2 cups of glutinous rice flour and add the water gradually. Add the water little by little and mix it upon adding until you achieve a dough -like texture. Continue kneading it until you achieve the desired texture.

Step 2

After achieving the desired dough-like texture, slice the cheese into cube size. Put one cube sized cheese inside the two tablespoon rice cake dough then mold it according to your desired shape and size. It's usually flat but I prefer the circle size and bite size only so you can eat it easily. Set it aside afterwards.

Step 3

In a separate clean bowl, mix the grated coconut and the sugar. Then set aside. We will use that later.

Step 4

Boil 5 cups of water on a large pot. When the water boils, place the rice cake and wait for it to float. If you're making a large volume of palitaw, make sure to cook it batch by batch. When the rice cake floats, it means that it is already cooked. Then, once it floats, take it out and place it in the coconut grated mixture that we set aside earlier.

Step 5

Transfer it to a serving plate and garnish the remaining grated coconut mixture. And it's done!
