CHEESE ENSAYMADA RECIPE

Hello again beautiful people of SteemFoods!

This Monday we start the week with something new on my blog. Today I will put down my knife my chopping board and switch to mixing bowls and whisks. Yes, today we are shifting our creative gears from cooking to baking.

Our very first featured baking recipe is a brioche style sweet soft dough pastry slathered with softened margarine or butter, rolled in sugar, and then topped with grated cheese. We call this Ensaymada in the Philippines. A popular bread/pastry that we have for "merienda" (afternoon snack) often paired with coffee.

I will share with you my Ensaymada recipe that I have perfected over the years which was one of the top sellers in my bakery years ago. So get your baking equipment ready because today, we bake!

INGREDIENTS:

Ensaymada Dough
250 grams All Purpose Flour
500 grams Bread Flour
1 pinch Food Coloring (Egg Yellow Color)
40 grams Skimmed Milk
90 grams White Sugar
30 grams Brown Sugar
10 grams Iodized Salt
15 grams Active Dry Yeast
45 grams Margarine
35 grams Lard or Shortening
1 Whole Egg
1 tablespoon Cooking Oil
280 milliters Water

Ensaymada Topping
1 pack Quezo Cheddar Cheese, 165g
1 cup White Sugar
1 cup Margarine

INSTRUCTIONS:

STEP 1: In a large mixing bowl, dissolve skimmed milk, food coloring, salt, white and brown sugar in warm water using a wire whisk. This is our wet mixture.

STEP 2: Add in oil, margarine, lard and egg. The mixture will start to clump so break them into small particles.

STEP 3: Add in active dry yeast and germinate for 5 minutes.

STEP 4: In a separate bowl, mix all purpose flour and bread flour using wire whisk.

STEP 5: After 5 minutes, gently add flour unto the wet mixture then combine all ingredients using spatula.

STEP 6: Remove the dough from the bowl and place it on a thinly floured countertop.

STEP 7: Stretch and fold dough for several times until dough is smooth and fully kneaded. Shape like ball then let it rest for atleast 15 minutes. Cover with clean cloth.

STEP 8: After resting, cut dough into half and roll into logs.

STEP 9: Cut into small pieces about 90-100 grams in wieght. then roll again the small pieces of dough like small logs.

STEP 7: Meanwhile, grease the ensaymada molder with margarine using a baking brush.

STEP 8: Then start to coil your small dough and place it on the mold. Let it rest for 15 minutes or until it doubles in size.

STEP 9: Bake in a preheated oven over 200 degrees farenheit or 100 degrees celsius for 10-15 minutes.

STEP 10: Once baked, let it cool down for few minutes from the mold.

STEP 11: Remove ensaymada from mold then brush top part with margarine. Repeat the process until all tops are covered with a layer of margarine.

STEP 12: Dip one ensaymada into the white sugar then top with grated cheese. Repeat the process on all of our Ensaymadas. Serve and enjoy.

This recipe makes 13 soft, cheesy and delicious Ensaymada.
