Good morning friends, it's a beautiful Saturday morning and today I prepared for your delight a traditional soup popular among the Urhobo speaking people of Nigeria. It's a regular feature in our traditional festivals, parties and general celebrations. I'll list the ingredients then give you the methods in a few steps.

INGREDIENTS
4 cups palm Nut fruits

1kg beef jerky

1 cup dried crayfish

400g okra fruits(Lady fingers)

1/2 cup dried scotch bonnet peppers and 2 large onions

600g smoked catfish

3 Maggi Star stock cubes, 1 tbs salt and spices(optional)

METHOD
STEP 1
I washed my beef jerky and tenderized by soaking it in very hot water for 15 minutes. I removed from the hot water and rinsed with clean tap water and set aside.

Next I washed my palm nut fruits and put in a suitably sized pot. I poured in 3 cups of water and set on fire to cook on high heat for 20minutes.

STEP 2
After 20minutes I removed my cooked and tenderized palm nut fruits from the hot water and set aside. I got a clean mortar and pestle and went to work extracting the palm nut juice from the nuts.

I put a little at a time in my mortar and pounded until the flesh is separated from the nuts.

I poured hot water so the oily fluid can be separated adequately from the mashed nuts.

Finally I poured the content of the mortar in a sieve and strained the juice from the debris. I rinsed off thoroughly with a cup of very hot water.

STEP 3
I placed the extracted palm nut juice about 2 litres in a clean pot and set on fire meduim heat.

After 15minutes of cooking to thicken and reduce, I added my tenderized beef jerky.

Next I blended my dried scotch bonnet and 2 large onions and added to the cooking palm nut juice.

I added 1 tbs salt, my special spices and 3 Maggi Star stock cubes. I stirred up and allowed to cook on while I cleaned up my smoked catfish with warm water. I deboned my catfish and added to the pot of soup.

I reduced heat to low and allowed to cook for 5 minutes. After 5 minutes I grated my okra and addded to the pot of soup.

Finally I gave a gentle stirr and allowed to cook just 2 minutes. I turned off the heat and my Amiedi Soup was ready. Amiedi in Urhobo language means Palm Nut Fruit Water hence the name Amiedi Soup.
