Shelf-Stable, Salt-Cured, Cold-Smoked Venison Sticks
No refrigeration needed!
This is getting delicious around here! As we continue our salt-curing adventures we've also enjoyed finally trying cold-smoking. My goal this time was to craft a venison stick, similar to a beef stick, without the grinding and casing process. We've got a ways to go, but what we are creating is edible and enjoyable, and shelf stable without refrigeration or cooking! Enjoy the show!
