How To Prepare "Tortang Talong" || Filipino Eggplant Omelet

For today, I'm going to share with you one of our Filipino favorite vegetable dish, it's called Tortang Talong. Tortang Talong, also known as eggplant omelet, is a fritter from Filipino cuisine made by pan-frying grilled whole eggplants dipped in an egg mixture. It is a popular breakfast and lunch meal in the Philippines.

This recipe is the simplest since I am using two main ingredients: eggplant and eggs. Some would add chopped tomatoes, spring onions, bell peppers, among others. I believe that what makes a good Tortang Talong is the aroma infused by grilling the eggplant before dipping them in eggs.

So let's get started!!!

The ingredients I used for this dish are the following:
5 pieces medium-sized eggplant
3 pieces beaten eggs
Salt and pepper to taste
1 tsp freshly ground pepper

THE COOKING PROCESS

Step 1. Wash the eggplant and drain in a colander.

Step 2. Prepare the charcoal ready for grilling.

Step 3. Grill the eggplant until its skin turns dark.

Step 4. Peel off the skin of grilled eggplant.

Step 5. In a bowl, beat 3 pieces of eggs with salt and pepper and a teaspoon of freshly ground pepper.

Step 6. Dip the eggplant in beaten eggs. You can also use a fork to flatten the eggplant and incorporate flavor with the eggs.

Step 7. Pan fry the eggplant, turning both sides until golden brown.

And voila! Our Tortang Talong is ready! C'mon let's eat!
