Steem Foods: Chicken Curry Rice

Today, I will be sharing with you one of the best food I had while living in Thailand for few years. Thailand has a lot of spices to use in cooking and they really have a savory and tasty dishes anywhere I go for a meal. It can be in a small eatery, side walk food stall, and in the known restaurants. This dish is most likely the same as the biryani rice in India or anywhere part of Asia.

So here's what we need...

1/2 kilogram of chicken
3 cups of rice
28 grams pack of yellow curry powder
25 grams yogurt
4 medium tomato
1 small onion
3 cloves of garlic (or garlic powder)
ginger (or ginger powder)
lemon (any variety)
spring onions

Procedure

Mix the curry powder, yogurt, and ginger into a bowl. You can grind the ginger or use the ginger powder.

Add the lemon juice and mix them well.

Marinate the chicken into the mixture. Set aside for few 5-10 minutes.

Chop the garlic, onions, tomatoes, and spring onions into small pieces.

Heat the pan and put cooking oil for shallow frying of the chicken.

Add the chicken when the pan is hot enough for frying.

Fry until golden brown or a little dark. No need to fully cook the chicken. Set aside the marinade.

When the chicken is done, save the oil and clean the pan the next step.

Sauté the garlic first, then add onions and tomatoes.

Add the rice and continue stirring.

Put the chicken broth. You can also use chicken broth cubes by simply melting it with 4 cups of boiling water.

(in cooking a regular rice, the proportion of rice and water should be 1 is to 1. For this case we need extra 1 cup of liquid for the spices and chicken)

Add the marinate mixture from the chicken. Stir well and let it boil for 1 minute.

Add the chicken and cover for few minutes or until the rice is almost cook.

When its almost done, sprinkle the spring onions into the pan and cover again until fully cooked.

In choosing the rice, it is better to use the long grain class or the jasmine rice is mostly available in Asia but any rice will do. You can also use red curry powder or make your own curry paste. It depends in the availability in your area and home. It is also good to serve hot and and have a glass of orange juice (cold drink is my preference 😁). This would still be good for leftovers and be eaten after few days as long as its in the fridge.
