Homemade pies with pickled cucumbers

Stir-fried with golden onions softens the taste of pickles. The filling becomes even more tender thanks to mashed potatoes.

Ingredients for the dough


  • Milk 100 ml + 1 tbsp. the spoon
  • Dry fast-acting yeast 10 g
  • Sugar 2 tbsp. spoons
  • Eggs 2 pieces
  • Salt ½ teaspoon
  • Kefir 300 ml
  • Vegetable oil 120 ml + for lubrication
  • Flour 750-800 g
  • Chicken yolk 1 piece

Ingredients for the filling

  • Potato 3-4 pieces
  • Salt taste
  • Vegetable oil 1-2 tbsp. spoons
  • Bow 2 pieces
  • Salted cucumbers 500 g
  • Ground black pepper taste

one. Mix warm milk with yeast and sugar. Leave warm for 5-10 minutes.

2 ․ Add eggs with salt, kefir and half of the butter. Mix well.

3 ․ Pour flour in parts, and then pour in the remaining oil and knead a soft elastic dough.

four. Put the finished dough in a bowl, cover with a napkin and leave warm for 30-40 minutes. After that, wrinkle and leave for the same amount.

five. Boil the potatoes in salted water for about 20-25 minutes, mash in mashed potatoes and cool.

6 ․ Heat oil in a skillet over medium heat. Fry the chopped onion for 5-6 minutes until it is browned.

7 ․ Finely chop the cucumbers or grate them on a coarse grater. Place in a dry skillet preheated over medium heat. Cook until all liquid has evaporated.

  1. Transfer the cucumbers to the onion and simmer for another 3-5 minutes.

  2. Add potatoes to onions and cucumbers, stir. Add some salt and pepper. Cool afterwards.

ten. Divide the dough into small pieces and roll into flat cakes. Place the filling on each piece and pinch the edges.

eleven. Grease a baking sheet with oil and place the pies on it with the seam down. Brush with yolk, whipped with a spoonful of milk.

  1. Bake at 200 ° C for about 20 minutes.
