What do you understand by food preservation?
Food preservation is a method through which food can be preserved for a long time. Basically keeping the quality of any food and not allowing any microorganisms to grow in it which are dangerous and harmful to humans. So food preservation refers to protecting food from various microorganisms including algae, fungi. We are taught about food preservation right from primary school so that food waste can be prevented. Bangladesh is a developing country and food conservation has been taught from the primary level to avoid food wastage.
Explain 5 ways of preserving food.
The oldest method of food preservation is drying. The practice of preserving food by drying it in the sun has been a very popular method since ancient times. Fish, meat, fruits and some vegetables are preserved by drying in the sun. The method of preserving food by drying it in the sun is as effective as it is long-lasting. It can be dried in the sun and stored for 6 months to 2 years depending on the type of food. Drying reduces the water content of any food and inhibits the growth of bacteria thereby keeping the food fresh for a long time. Rice, dal, wheat etc. are stored by drying.
Foodstuffs can also be preserved using different materials. Below are some examples
- Different types of fruits (olives, mangoes, plums) can be preserved by immersion in liquids such as oil, alcohol. This method is called Pickling.
- Salt preservation: Fish, meat and other perishable foods are preserved with salt. This process is called curing.
Food can be preserved by cooling process. In this method, the reproduction and propagation of microorganisms is reduced at low temperatures. Refrigerating food is one of the most popular methods these days. In this way, almost all types of food can be preserved for a long time. Almost all types of food including milk, eggs, pulses, vegetables can be preserved in this method.

The best way to preserve perishable foods is to freeze them. This is not a long-term preservation process. This process varies according to the type of food. Fruits and vegetables can be stored from one day to 14 days, while fish and meat can be stored from one day to one year. Freezing inhibits the growth of bacteria, yeast and mold, extending the shelf life of a wide variety of foods.
People say eating freshly cooked food is better than eating preserved food. What's your opinion on this?
Of course I believe in this. Cooking with fresh vegetables is more nutritious than tasty. The quality of preserved food is not always the same. In many cases we know that harmful chemicals are added to preserve food. They not only pose health risks but are also prone to diseases like cancer. Also, apart from the health aspect, when it comes to taste, cooking fresh food is more than preserving the taste.
