Hello everyone, my amazing chef friends, today I'm back again with a dessert recipe that comes from my area. Traditional food is indeed very appetizing, starting from its appearance to its delicious taste, making this traditional food very popular with all groups. Today I will present a traditional dessert that comes from my area. Here we call it Putu Ayu. This Putu Ayu cake is very unique. The combination of the soft cake and the aroma of pandan and the addition of grated coconut on top makes this Putu Ayu cake very delicious and in great demand by all groups. Putu Ayu is still popular today.
In my opinion, this Putu Ayu cake is very unique because the cake is soft like pandan cake, the only difference is that the addition of steamed grated coconut makes this Putu Ayu cake taste more special with a combination of soft, sweet cake and savory and salty coconut making this dessert very special. Here I will share the Putu Ayu recipe with all my friends.
200 grams of wheat flour
150 grams of granulated sugar
200 ml of coconut milk
1 tsp of sp
1 tsp of vanilla
sufficient pandan paste / pandan juice
1 teaspoon of salt
1 tablespoon of cornstarch
2 pandan leaves
- The first step is to break two eggs, then add 150 grams of granulated sugar and one teaspoon of SP, then mix everything at high speed until the mixture becomes white and streaky.
- After that, add 200 grams of wheat flour gradually and add two drops of pandan paste, then add 200 ml of coconut milk gradually, then stir briefly with a mixer on low speed, stir until evenly mixed.
- Then take 250 grams of grated coconut, then add one teaspoon of salt and add one tablespoon of cornstarch and add two pandan leaves, then stir until smooth, steam for 5 minutes.
- After that, prepare the mold, then grease the mold with a little oil. Then add the grated coconut that has been steamed while smoothing it out so that it is perfect. Do this until it is all used up. After that, pour the mixture into the mold that has been greased with oil until it is full. Don't fill it too full because it will expand later.
- After that, steam for 40 minutes and test with a toothpick to see if there is still dough sticking to it. If not, it means the Putu Ayu is ready. Then let it cool for a while in the mold. After it has cooled, remove it from the mold and the Putu Ayu is ready to be enjoyed.

📌 To make Putu Ayu using grated coconut, try adding one tablespoon of cornstarch to the grated coconut so that the grated coconut sticks perfectly and press the grated coconut so that it is solid in the mold.
📌 Use all ingredients at room temperature and try not to use coconut milk too thick so that the putu ayu expands perfectly
📌 Spread oil or margarine on the Putu Ayu mold so that no Putu Ayu sticks to the mold
