Greetings to all members of this prestigious community and to you who take out time to read this post. You are welcome to my blog. Today I want to share with you how l prepared my baby's favorites dinner.

What is the name of your cooking recipe? How is its popularity?

The name of my recipe is called unripe banana porridge, locally called oto mboro. Banana porridge is a natural foods 5 times nutritious and delicious to be consumed than canned and pack foods. Actually, it all depends on people's choices but personally I like nature so I like exploring it.

To be very honest, Oto Mboro or Unripe Banana Porridge is a healthy delicious food of the Ibibio and Efik people of Akwa Ibom State and Cross River State of Nigeria.

Have you ever had a taste of it?

Unripe banana porridge is low in calories but high in nutrients, it is a good source of vitamins like C and B6 plus potassium, fibres. The Food is made with pureed or grated unripe bananas and veggies.

Each recipes has it own popularity, talking of unripe banana porridge, it has a valuable place in Nigeria. Let talk about it traditionally, it is on a rare occasions that this dish be missed in most traditional ceremonies, for example, ceremonies like traditional marriages and others occasions.

Since this dish is so delicious and healthy it becomes an ideal food given to weaning babies and young maidens who are confined in the fattening rooms, (nkughu Uman) a tradition of Ibibio and Efik tribes especially in some parts of Nigeria(south south). This shows that oto mboro is recognised.

Ingredients: Unripe Baynan, Crayfish, Fish, Onion ,Pumpkin leaf, Palm oil, Seasoning to taste, pepper, scent leaf and salt

Steps

I Wash and peel my Bananas. Use knife to scrape off the thin green membrane that is covering the flesh of the banana.

I Grate the banana to puree using a grater, this is to bring out a soft and smooth texture.

Add your desired quality of water in a pot, put it on fire. When the water steam, add onion for aroma. Add oil, pepper, crayfish, seasoning cube for taste, fish and all other ingredients, allowed it simmer for 3minute.

Now is the perfect time to adding our banana, so with spoon, I scoop the banana puree in small lumps into the pot.

I use knife and cut the lumps and added my already chopped scent leaf and palm oil. I stirred every thing together and taste my food, Boom it was yummy 😋😋.
