#club5050 Easter Lamb

I have been preparing a leg of lamb in the kitchen and It is now in the oven cooking.

So I decided to go into the garden with a glass of fizz to start writing this post.

I will probably finish writing and posting later once we have eaten so I can include a photo of the cooked lamb.

This year I followed a Tom Kerridge’s recipe which is quite easy.

I peeled about 2kg of Maris Piper potatoes which should be fine between the six of us.

Then I cut them into 1cm thick slices. I sliced two large onions which I mixed with the potatoes.

I added salt, pepper and rosemary and poured the potatoes into a large roasting tin.

Then I took the lamb leg and I made eight to ten incisions and stuck a garlic clove and rosemary into each one. Then I seasoned the lamb all over and sat it on the potatoes with the skin side up.

I poured 600ml of chicken stock over the potatoes and I placed them into the oven, 140 degrees for fan-assisted oven for five to six hours. The potatoes will go crispy on top and will absorb all the stock and the lamb cooking juices.

I also made rhubarb crumble with fresh rhubarb picked straight from the garden. You just need to chop it into 3cm pieces and add three tablespoons of sugar. Top with a crumble mix, which is flour, butter and some sugar rubbed together till they resemble breadcrumbs.

It goes in the oven for about forty minutes and it is served with custard.

It is indeed, very well spotted @ronthroop To be honest I was actually waiting for somebody to comment on my early rhubarb. It was hiding behind the potting shed all winter and it surprised us all this year. But we had a really mild, warm winter. We can't complain at all. I love your Covid daffodils. They seem like growing on planet Earth, the green surface the vase is on, which can be looked at as a symbol of hope and a new beginning. I still have some daffodils in bloom in my garden including a few with three flowers on one stem. The bluebells are blooming here in London already too which I can't wait to share a photo of together with a few others later today.

It’s just not fair. I don’t ever want another long winter without some significant break from the cold, howling winds off Lake Ontario. Must seek winter refuge in warmer climes:)

I think you should! There is nothing better than some winter sun. Then people like me who follow you will have the pleasure of looking at some exotic places that have inspired your art. I have not been to the lake but I picture its crystal clear waters quite different in comparison to the sometimes even brown river Thames. Do you get many tourists out there, maybe in the summer months?

Lake Ontario is beautiful, and perhaps perfect in summer and early autumn. Tourists non-existent. In July, my wife and I have the shoreline to ourselves. Paradise for the peaceful-minded.
Then on November 1, a pall covers the land...

We also had a roast leg of lamb for dinner last night - it was beautiful and yummy.

Your Dinner makes me hungry looking at it :)

While I was reading the post I got hungry, how sweet the preparation doesn't look difficult and the ingredients are not complicated I like rosemary and garlic for the flavor of meals, now I don't know the sweet you made, but it still looks delicious sweet is not rich haaa, I'm glad they celebrated Easter with something special, here it's tradition to eat fish but I forgot to take the picture🤦‍♀️I was hungry, I loved the yellow flowers I know it as yellow daffodil they relate it to the rebirth and the new beginnings.

Greetings @lanegra2804 Happy Easter. The crumble is quite a traditional pudding here in England. Other than rhubarb, apple and plum crumbles are very common. Some go well with nuts too, especially walnuts. 😱First time ever I hear about the tradition of having fish for Easter. How not to love this platform for its diversity! What sort of fish is this? How do you normally cook it? I really wish that you captured your festive meal but there is always next year.

The idea is not to eat red meat, but the traditional thing is fish, it can be any type of hake, armadillo, croaker, cod, or shellfish, you can also eat chicken or chicken sausages, and the sweet can be rice pudding or sweet of papaya and a delicacy of cornstarch, yours is a delicious dessert, I love nuts.

But the idea is to enjoy a moment in peace and with the family.

Makes sense and thanks for the detailed reply. That actually gives you quite a lot of meats to choose from. I like fish and from the ones you mentioned cod is really popular here in England. I totally agree with you that family comes first. I had a fabulous start of the week. We had yesterday off so I spent it surrounded by nature. I plan to post about it later today as it included a wildlife encounter so keep an eye out.

Looks like a delicious dinner! We ended up cooking a ham for Easter rather than lamb which is ridiculously pricey, here in the US.

It looks like a delicious menu. Easter is not celebrated in my country, but it is enjoyable to read posts about Easter and get to know different cultures.

Wow! I only realized at the end what size a piece of meat is! As always, everything looks very tasty!
