Cooking Rice in Turkish Style Chicken Broth 🍚 🌾
I haven't been able to post for a few days because there is a sweet rush in my house. Maybe many of you know. We are in the month of Ramadan, as soon as the fasting ends, it will be Eid al-Fitr. It's almost time for the holiday and we started to clean the house from beginning to end. In our country, many families clean their homes before the holiday. We would like to welcome those who come to our house to celebrate the holiday in a clean way. Of course, we also clean outside of the holy days, but this has become a routine for us now. We have a good time doing this job together as a family. Tomorrow we will make Turkish Baklava for Eid al-Fitr. We will definitely serve the dessert to our guests who will come to our house. Baklava is a bit difficult and takes time, but it's all worth it.
Today's topic will be the rice recipe we cook in Turkish style. In many houses in our country, we cook rice as I will give below. Pilaf is one of the dishes I eat without getting tired of it. Without further ado, let's move on to the description.
Materials
- 2 Cups of Rice (I used 200ml cup size)
- 3 Cups of Chicken Stock ( you can use chicken bouillon if you want)
- 2 Tablespoons Olive Oil
- 2 Tablespoons Barley Noodle
- 1 Tablespoon of Butter
- Salt *(add according to your taste)
- 1 Teaspoon of sugar (6gr)
- 1 Tablespoon Lemon Juice
Preparation and Cooking Part
The most important step for pilaf is to thoroughly cleanse the rice from starch. We attach importance to this step so that the rice is not sticky. If the starch is not removed, the rice will be a little sticky. So let's wash the rice until the water turns clear. If you have time, you can soak the rice in water for a while. I didn't have much time, so I washed it thoroughly.
Add oil to a deep and wide saucepan and heat it a little. Barley noodles are added right after. You don't have to add the barley noodle, but I think it gives a nice flavor to the rice and adds a visually different look. I always add barley vermicelli while making rice.
Fry the noodles until they turn a light brown colour. When the noodles turn brown, add the washed rice right after.
The second important step is to roast the rice. In my country, it is said that the more you fry the rice, the better rice you will get. I usually do this for 5 minutes on low heat. Then I add the chicken broth. In rice, the measure is always as follows. 1.5 scales of water is added to 1 measure. Of course, this amount may vary slightly depending on the type of your rice. We will understand this at the cooking stage. You can add just water if you wish, but I think adding chicken broth would be better in terms of flavor.
Adjust your salt according to your taste. The reason I added lemon juice is to keep the rice white while cooking. Sugar is added to balance the taste, especially in olive oil recipes. Finally, mix it once and close the lid of the pot and wait for the rice to cook on low heat. Be careful not to open the lid too much while cooking. We do not want the steam inside to disappear. Therefore, a pot with a glass lid would be a much better choice. You can see what's going on inside. After a while, when you see that the water is well absorbed, taste the rice. If it's still too hard, you can add some water. As I said above, not every rice brand is cooked with the same amount of water. That's why I added a little more water. Then I waited again.
Take it off the heat without too much mush. At this stage, when my rice is a little hard, I take it from the stove. Don't worry because we'll let it brew in its own heat. I added butter to the rice I took from the stove. Sometimes I do this during the roasting phase, but this time I added it after cooking. Butter adds flavor to rice. Sometimes, if I have homemade butter at home, I reduce the olive oil and add more butter.
I add the oil and close the lid of the pot and wrap it with a thick cloth. Thus, I allow it to brew by itself without losing its temperature.
How to Serve?
I cut some of the chickens I boiled into small pieces for chicken broth. I sprinkle black pepper in a deep and small bowl and add a pinch of chicken to it. Then I take a few spoons of rice and add it to fill the bowl. When my bowl is full, I cover the wide plate and turn it upside down and lift the bowl. When we do this, it will take the shape above. Black pepper is the spice that goes best with rice. That's why I always add some black pepper to it before I eat it.
Enjoy Your Meal
A little suggestion; If you wish, you can add peas, chickpeas, dried beans to your rice. Of course, what I'm talking about must be cooked. You can add one of the peas, chickpeas and beans that are boiled close to the cooking time of the rice. My favorite is the one with chickpeas. Sometimes I cook chickpeas to add to rice and put them in the freezer. When making rice, I take it out and add it to my rice. When I looked in the freezer, I saw that my chickpeas were finished. I need to add it to the freezer as soon as possible.
