Easy Turkish Pastry Recipe👩🍳 Spinach Crispy Rolls🥰

I guess there is no one who does not like pastry recipes. I can't say no to any pastry, no matter how caloric it is. I especially love recipes that are practical and quick. While I was at the market today, I thought of making Spinach Roll Pie. I love this recipe since I was a kid. Being both practical and delicious, it is served in many events in my country. Whatever is added to it, its flavor is always appetizing. However, I prefer the spinach and potato version more. While preparing, I took care to detail the stages. So without further ado, let's get started with my recipe.
Materials Needed
- Yufka (or phyllo pastry)
- Spinach (400 g)
- White Cheese (50 gr)
- Oil (85ml)
- Black pepper
- Red pepper
- Salt
Preparation Phase
First I washed the spinach. I don't like washing spinach at all because it's hard for me to clean it from the soil. After washing it with plenty of water, I kept it in the strainer to drain the water. After draining the water, I chopped the spinach into 1-2 cm thick.
After I lit the bottom of the stove, I added a spoonful of oil and added the spinach and closed the lid. If I had made the pastry in the oven, I wouldn't have killed the spinach, but since I was going to fry it, I cooked it on the stove for a few minutes. When the spinach got soft and reduced, I turned off the stove.
The thing that makes me laugh the most about spinach is if you want to add a sack of spinach to the stove, but when it's cooked, only a handful of leftovers always makes me smile. I especially love the memes on this subject. example :)
I wanted to add cheese to the mortar because I like spinach and cheese very well together. You can add any other cheese you like. In fact, if you have it at home, melted cheese would be much better. I added spices according to my taste, but if you don't like it, you don't have to add it.
After mixing the mortar thoroughly, it was time to add it into it. You can add the mortar to the top and wrap it as in the image. The dough I use is sold exclusively in the form of triangles for these recipes. But usually these doughs are sold in circles. I used to buy round ones and cut them into triangles myself. You can also prepare it as in the picture.
Cooking Phase
I added 85ml of oil to the pan and heated it up a bit. In fact, I could add a lot of oil, just like preparing french fries. Most people cook this way. I didn't want to spend too much oil because it is also cooked in less oil. When the rolls reach a golden color, you can take them to the plate.

Note; If you wish, you can make the remaining dough with another mortar like mine. I filled the remaining dough sheets with my other favorite potato mortar and added them to my freezer. I'll take it out and fry it when I want to eat it again or when guests suddenly come to the house.
