INTRODUCTION

I will be showing you how I made my traditional dish here in Akwa Ibom, Nigeria. It is called Ekpan-Nkuwuo. It is one of the special native dish in south-south eastern part of Nigeria. It is commonly eaten by the people of Cross river state and Akwa ibom state.

This our mouthwatering traditional recipe is made with grated cocoyam or water yam – wrapped in cocoyam leaves and cooked with periwinkles and lots of palm oil. The cocoyam leafs are sometimes alternated with pumpkin leaves commonly known as ‘ugwu’. But note that it is originally cooked with cocoyam leaf, and it can be very scarce in the markets, so that is the main reason we alternate it with pumpkin leaf.

Why I like this dish

I like it because it is so nutritious, it's has many vitamins that helps build up the immune system,it's has high protein. It's ingredients too is very good to the body, like the leafs and other proteins in it. It is highly proteinous.
It is my favourite.

Let's get started

First of all I went to the market and buy cocoyam and wateryam which are the main ingredient for these delicacy.

INGREDIENTS

Seasoning cubes1 steem

Scent leave (Ntong)1 steem

those are the ingredients to be use, u can also include goat meat it's optional.

Preparation of Ingredients

  • Peel off Cocoyam and water yam and wash it

  • Grate the cocoyam and water yam, add salt to it, mix it together and set aside.

  • Cut and wash your perewinkle

  • Wash your Cowskin

  • Wash the pumpkin and set aside.

  • Cut onion

  • Blend pepper and crayfish and set aside.

  • Wash and cut the scent leaf into smaller pieces.

Method of preparation

Step 1

  • I prepare the pot by rubbing the palm oil inside it, so that the food doesn’t burn at the bottom, as shown below.

Step 2

  • I added washed perewinkle to the pot, season with salt,

Step 3

  • I used a torn pumpkin leaf to wrapped already grated cocoyam and wateryam into my cooking pot, till the whole mixture is finished, as shown below.

Step 4

  • When done with the wrapping, I placed the pot on fire, I added some hot water to the pot and cover to cook for about 5mins.

Step 5

  • After 5mins, I added all my ingredients that is, pepper, Crayfish, onion, seasoning cubes, salts except veggies, and allowed to cook again for about 15mins.

Please note, it should not be stirred yet, so that it doesn't turn out the mixture from the leaf, and it will spoil the look of the meal

**Step 6 **

So after the 15mins, I gave it a nice stir and cut into smaller pieces, taste and add salt to my desired taste,

Step 7

Finally,

I added my veggies, Pumkin leaf and the scent leaves.
I added some oil, you can add yours if it requires then stir and bring it down.
