Processing(late) OWC - Day 4

Today was a darker day for me, though I did tend to homestead chores. One reason for the darkness was the realization that I was behind on this week and in one of my classes we're studying Poe.

....
That's as far as I got before falling asleep last night. :/
...

Well, YESTERDAY was dark for me because I am studying Poe this week and last night we processed the last 2 buns from the first litter. It was a kind of spiritual graduation for me. I hate the killing part, it always hurts my heart. I express my thanks to the bun and pet it slowly as the nerve reflexes are finishing and I feel the last bit of life leave its body. Then, Jon cuts its head off.

Unfortunately, killing is a skill like anything else, but the learning curve is not only sharp it is also deep. Somewhere along the line, we started to care enough about where our food is coming from to start our own line of meat rabbits. Rabbit meat is yummy, sustainable, and economical, but it is a struggle with your inner child to end their lives.

Processing is the easy part, the deed is done and we are now to make the most of the situation.

Now we have food in the freezer and I'm able to rearrange the growouts a bit so we can soon empty the colony when the new kits arrive.

Please excuse me while I study Poe and keep my A in American Romanticism.

Love,
Jess
