Strawberry Mousse Parfait

If you’re a fan of strawberries, this strawberry mousse parfait is for you! It’s creamy, dreamy and absolutely perfect! The mousse is made with whipped cream and pureed strawberries, then topped with chopped strawberries, strawberry Jello and more strawberries on top! This dessert is a great idea for Valentine’s Day, too!

RECIPE

Ingredients

2 cups (475ml) whipping cream
1/3 cup (67g) white granulated sugar
8 ounces (225g) cream cheese, softened at room temperature
1/2 cup (90g) white chocolate chips, melted
1/2 cup (90g) sweetened condensed milk
1 teaspoon strawberry extract
red food coloring
2 cups (300g) strawberries
1 tablespoon (15g) unflavored gelatin
2 to 3 tablespoons water
2 cups (300g) chopped strawberries
6-ounce (170g) package strawberry Jello
1 cup (236ml) boiling water
2 cups (473ml) iced water
chocolate covered strawberries, for garnish

Instructions

1- Prepare the whipped cream first. Pour the whipping cream into a mixer bowl and add the 1/3 cup sugar. Whisk on high speed until a fluffy whipped cream forms. Set the whipped cream into the refrigerator until needed.
2- Prepare the strawberry base. In a large bowl, whisk together the softened cream cheese, melted white chocolate, sweetened condensed milk, and extract. Add red food coloring if desired. Whisk in the pureed strawberries; set aside.
3- In a small bowl, mix together the unflavored gelatin and water. Microwave the mixture for 1 minute, stirring every 10-15 seconds until gelatin is completely dissolved. Pour the gelatin into the strawberry base and whisk until smooth.
4- Remove the whipped cream from refrigerator. Fold in about 1 cup of whipped cream into the strawberry base. Then begin adding the strawberry base into the whipped cream. Fold the base and cream together very gently, keeping the cream light and fluffy.
5- Pour the prepared mousse into glass mugs or containers. Fill about three-quarters of each container. Top off each glass with chopped strawberries. Set the mousse into the refrigerator to set for about 1 to 1 1/2 hours. Make sure the mousse is set before adding Jello!
6- Prepare the strawberry Jello. Place the flavored gelatin in a bowl and add 1 cup boiling water; stir until dissolved. Add the 2 cups iced water and stir until mixture is cooled. Using a ladle, carefully pour the prepared Jello over the set mousse. Fill to the top of each container. Set the dessert back into the refrigerator until completely set, overnight for best results.
7- Optional: top each dessert parfait with a chocolate covered strawberry, or a combination of chopped strawberries and other berries, such as raspberries. Keep refrigerated!
