When the world Conspires
Isn't it crazy how the world conspires to either be for or against you at certain points in your life? Let me give you some background as to why I say this...
I would like to start off this post with an apology - for my absence and lack of posting. Truth is, I've been super busy. I also had no idea what to write - I had a serious case of writers block, or if I wanted to write, it was the case of will you, dear reader, enjoy and appreciate this?
But - we persevere and continue through! The great thing about being gone so long is that I got a pretty substantial amount of footage... coverage.... I-can-put-this-on-my-blog...? You know what I mean right?
So I moved into a new place 2 weeks ago. I am renting out a room that has an on-suite bathroom. The moving included me trawling 2 large, heavy suitcases on the bus and walking the rest of the way with my back deciding that spasms would be a fun challenge to top it off. Thankfully, the rest of my luggage was dropped off for me, meaning I did not have to make 2 more great spasm-inducing, alternative-weight lifting treks. All moved in (but not unpacked - I would only be unpacked 2 weeks later...) and settled, I headed off to work for my evening shift, which I was so ready and enthusiastic for! Lol.
We is excited that I have a new place to stay, however, we is even more excited because I may be moving into my very own apartment in October (if all goes well) so pray people please! God is truly good and His timing is indeed perfect! If the apartment becomes mine, there will definitely be a blog post or two (or more) on moving in and renovating! Aah I'm so excited for the renovations!
On another happy note, I finally got my PIN for my bank card... 3 months and 4 separate PIN orders later. My patience was truly tested! However, it came and I swiped my card for the first time to buy my new laptop!! oooh purdy! I am currently writing my blog from it and I feel so professional and productive. I'm still trying to type like a pro on the German QWERTZ keyboard it features - but hey, there always has to be a challenge in everything right?
So back to the first part of this post, also including the title of this post - sometimes it just feels like the world conspires for/against you. Meaning - when something goes wrong, usually it feels like everything goes wrong at once. Dishwasher is broken? Great, "Then I, too shall be broken." Says the fridge, causing the kettle to konk-out over peer pressure and anxiety. Since disasters and road blocks come all at once.
It's like a roller coaster - deep breathes everybody! And throw your hands in the air like you just don't care because it's not worth getting upset about! There is always something to be joyful about. For example, even though it was truly frustrating that my PIN took 3 months to arrive, I was thankful that I still had enough cash and wasn't completely stranded! I have decided not to stress the small stuff, to hardly stress at all (which sometimes leaves me being too calm and freaks both me and my mom out). I gotta have a healthy balance and all...
Before my "Great Trek" I decided to cook a meal for the family I was au pairing for. It needed to be a meal that did not include too much prep work, as I was working that day. It had to be easy but tasty, and something that the kids would also enjoy. I wanted it to be a relaxed meal. Therefore, I decided to make delicious, simple but full of flavour and texture, Pulled Pork Buns with a crunchy Coleslaw. Can you say Yum?!
I wish I had taken a video of me pulling the meat apart in the slow cooker - food porn right there! The meat just fell apart and was so succulent and tasty. Okay, so credit must be given where it is due - I was inspired by Gordon Ramsay - however I did not follow his recipe. Those who know me will know that I never follow recipes when cooking. (Baking is another sad story and we shall not trespass to the area in which I am not invited... and unsuccessful.)
Warm buns topped with crispy, fresh Feldsalad in a light vinegar and olive oil dressing. Piled with juicy, smokey flavoured pulled pork and a crunchy coleslaw in a light schmand and apple-cider vinegar. These were a total hit among everyone. Topped with some mayo and tabasco - and there were smiles all around. Yes, I did not follow a recipe when it came to flavouring the pork shoulder - and I'm glad I didn't - I was able to make it my own and reap the benefits of a tasty dish which turned out to be exactly what I wanted!
