010 - Quick Recipe - Cauliflower Rice Sushi Roll

Quick Recipe: Cauliflower Rice Sushi
Ingredients
- 150 g Maas River Farms’ Cauliflower Rice
- 1 tsp White Wine Vinegar
- Dash of Monk Fruit Sweetener
- Dash of Himalayan Sea Salt
- 1.5 oz Kirkland’s Wild Smoked Sockeye Salmon
- 40 g Hass Avocado
- 20 g 365’s Cream Cheese
- 15 g Asparagus
- 1 Nori Sheet
- 5 g Yellow Bird Sauce’s Blue agave Sriracha
- 1 tbsp 365’s Mayonnaise
- Optional: 10 g Additional 365’s Cream Cheese
- Optional: 5 g Lime Juice
- Substitute: Raw Salmon instead of Smoked (less carbs)

Instructions
1. Microwave cauliflower rice for about 3-4 minutes. Transfer the rice onto a pan and add vinegar, sweetener, and salt. Sautee the rice until most of the moisture has evaporated. It is important that the rice is dry or else the nori sheet will get soggy and hard to cut.
2. Optional: Mix 10 grams of cream cheese into the rice. This helps with binding the rice together. You can roll without the cheese mixed in, which is my preference because I try to limit my dairy intake.
3. Place the rice in the fridge. If the rice is too hot, you’ll also get a soggy nori sheet.
4. While the rice is cooling in the fridge, air fry the asparagus for about 5 minutes at 400° F and cut and weight all other ingredients.
5. After the rice has cooled, start rolling up your sushi. I use Sushiquick. I like it. It makes rolling the sushi much easier than the bamboo thing I had before.
6. Spicy Mayo: Mix mayo and sriracha (also lime juice if using).

Fat: 25.8 g / Protein: 16g / Carbs: 14.1g / Fiber: 7.4g / Net Carbs: 6.7g
Make It Kid Friendly
Instead of cauliflower rice, you can substitute it for brown rice or no rice at all. My daughter wanted no rice. She also dipped it in low-sodium, gluten-free soy sauce instead of the high-fat spicy mayo sauce.
