一、钵钵鸡汤料做法:
1.汤料一般用鸡汤,这个一定要!鸡汤放凉后,倒入盆子。
2.用大豆油或者花生油,反正是植物油就好了,炸辣子和花椒。把辣椒面和花椒(辣椒面一定要买粗一点的,不能买细的)放入碗中,放好盐,把烧好的油倒入碗中。把炸好的辣椒花椒和油一起倒入晾凉了的鸡汤中。辣椒和油的数量要能够盖住盆子里面的汤面,因为是植物油所以不会腻口,反而让串更加油滑嫩爽,就是这点胜过了麻辣烫的口感,油要浮起来至少1cm。(油面浮上的好处是,首先,油面足够才可以让串油滑爽口,这就是钵钵鸡诱人的特色。再则还可以防止变质,因为汤料一般要用几天的,有辣油封面,汤料和菜串就不易腐败)。
3.放料。把糖、醋(如果当天吃完的就可以放少许或者不放,按个人口味,少许可以去腥提味。还有如果汤料要用几天的,就切忌不能放醋,隔天就容易串酸腐的味道),香油,放入汤中,注意香油要多放!!川菜特色!
4.炒芝麻。买白色的带皮的芝麻(这种比较香),放入锅中炒出香味!然后洒在汤料上。川菜必备的!
5.最后为了好看,也可以再炸一些灯笼椒,飘在上面很漂亮。
