Fried cauliflower with soy and sugar

What do you need:

  • 1 large cauliflower, cut into florets
  • 1 egg, beaten
  • 2 green onions, thinly sliced
  • 1 cup of ice water
  • 1/2 cup all-purpose flour, sifted
  • 1/2 cup of cornstarch
  • 1/3 cup chili garlic sauce
  • 3 tablespoons of brown sugar
  • 2 tablespoons of soy sauce
  • 2 tablespoons of sesame seeds
  • 2 teaspoons of sesame oil
  • 1 teaspoon of grated ginger
  • 1 teaspoon of baking powder
  • 1 teaspoon of kosher salt
  • Vegetable oil for frying
Whisk together the ice water, flour, cornstarch, baking powder and salt in a bowl to prepare the dough. Heat vegetable oil over medium-high heat in a pan. Working in batches, mix the cauliflower into the batter and fry 4 minutes on each side. Remove from the heat and place in a paper towel-lined plate. Combine the chili sauce, brown sugar, soy sauce, sesame oil and ginger in a bowl. Toss the fried cauliflower into the mixture, sprinkle with green onions and sesame seeds then serve.

Brussels sprouts macaroni

What do you need:

  • 1/4 kilogram of fusili pasta, cooked
  • 3 cups of Brussels sprouts, cut in half
  • 2 1/2 cups whole milk
  • 1 1/2 cup white cheddar
  • 1 cup of fontina, shredded
  • 1/2 cup panko breadcrumbs
  • 3/4 cup freshly grated Parmesan, divided
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 tablespoon of olive oil
  • Kosher salt
  • Freshly ground black pepper
Arrange the Brussels sprouts on a baking sheet brushed with olive oil. Season with kosher salt and ground black pepper, then bake in preheated oven (375F) for 30 minutes or until tender. Meanwhile, melt the butter in a saucepan over medium-high heat. Add the flour and milk to the pan and whisk together. Season with salt and pepper and simmer for 5 minutes, or until the mixture thickens. Remove from the heat then stir in the white cheddar, fontina and 1/2 cup of Parmesan. Mix until the cheeses are well incorporated into the mixture. Stir in the Brussels sprouts and cooked pasta then transfer everything to a baking dish. Combine the breadcrumbs and remaining Parmesan in a small bowl and season with S&P. Sprinkle the mixture over the pasta. Bake for 30 minutes in the oven (375F).
