Gluten free bread recipe for burger

Here is my gluten-free bread burger recipe. A soft bread, decorated with sesame seeds, perfect for a hamburger. I grill it in the oven so that the outside stays soft and the inside is slightly crispy. Without any additives, it is not the very inflated and smooth traditional bread of commerce, because the buckwheat flour used in the bread mix that I use gives it a real flavor of homemade bread. An idea by the way to celebrate Father's Day Sunday...

GLUTEN FREE BREAD RECIPE FOR BURGER

I rarely cook with a mix ready gluten free, but it makes my life easier for my buns burger. There is no additive in its composition, and there is in buckwheat flour, the one I like so much and that brings a beautiful color to the dough. Gluten-free cooking is often made from rice flour and potato or corn starch, which gives a very white dough color, and not always very appetizing. And when we cook "home" what we want is that it is good to taste but also "appetizing" for the eyes...

Gluten-free breads "buns" for burger
For 4 burger breads
Preparation: 20mn + 15mn, Rest: 1h, Cooking: 20mn
INGREDIENTS:
• 260 g gluten-free mix flour for bread ( without additive, the one I use "Nature & Cie" is composed of rice flour, potato starch, buckwheat flour, baker's yeast, salt, guar gum) + 2 to 3 tablespoons to flour well hands.
• 40 g of tapioca starch (I use the gluten-free certified "My life without gluten") . Beware, tapioca starch has the texture of talc, like cornstarch; nothing to do with the tapioca micro-beads that unfortunately often carry the same name of "starch" in the market.
• 150 ml of milk
• 50 ml of water
• 8 g dry baker's yeast (yeast to be dried directly in the flour, without activating it before).
• 1 tbsp. coffee with blond cane sugar
• 1/2 cuil. fine salt
• 2 eggs (1 for the dough, 1 for the frosting)
• 20 g of sweet butter cut into small pieces.
• Sesame seeds (optional)

PREPARATION:

  1. In a saucepan, warm the milk and water to about 40 ° Celsius. Add the butter and sugar, salt and stir to melt. Keep aside.
  2. In a salad bowl, mix the flour, starch and dry yeast. (If you are using yeast, do not forget to add sugar to help activate it)
  3. Gently pour the mixture of liquids, then add the egg. Stir with a silicone spatula to obtain a homogeneous paste and a little thick.
  4. Cover the salad bowl with a film of food to close it tightly and let it rise in a warm place for 1 hour.
  5. Preheat oven to 175 ° C. Prepare the baking sheet covered with a sheet of baking paper.
  6. The dough has doubled in size and is full of bubbles. Using the spatula, divide evenly into 4 parts, and the dough will deflate, it is normal.
  7. With much floured hands, take each part and shape the rolls. Place each bun on the baking sheet.
  8. Beat the egg with a fork and brush each bread with this glaze using a kitchen brush. Sprinkle with sesame seeds. To cook 20mn.
  9. Take out of the oven, wait 15 minutes before slicing for use in buns.

To heat them and prepare burgers: slice them, place them on a baking tray facing inwards, place a knob of butter inside and heat for a few minutes. What is expected of a burger bread: be crispy on the inside and tender on the top. I also point out that these burger breads are less flexible than those with gluten, so it is better to use a 100g rounded steak and round flat so as not to break the bread by squeezing it between the hands.
My burger features: chopped steak, red onions, tomato, sweet and sour pickles, lettuce, ketchup, mustard. Free to everyone to add grilled bacon, cheddar slice, etc...
