MANGO JELLY
A very popular and traditional sweet in Venezuela made from mangoes is the well-known and exquisite "mango jelly", which is prepared from green mangoes and other times from mangoes pintones. This delicious delicacy has a flavor between acid and sweet, it is polished and its texture is thick.
Ingredients:
• 15 green mangoes.
• Required amount of water.
• 750 gr. of sugar.
• 2 tsp. of lemon juice.
• 1 tsp. of prepared mustard.
• Butter (optional).
preparation:
• Wash the handles well.
• Place them in a pot with enough water to cover them.
• Bring to a boil and cook until the skin of the mangoes opens, approximately for 20 minutes.
• Drain and let cool.
• Remove the skin with your hand and in a fine sieve rub the inside of the skin and the peeled mangoes, until all the pulp passes through the sieve.
• Weigh the pulp to validate the indicated amount.
• In a pot add the pulp, sugar and lemon juice.
• Mix well and cook over high heat until it reaches a boil.
• Stir constantly in a non-circular way with a wooden spoon, avoiding sticking or burning.
• Cook for 10 to 12 minutes.
• Pour immediately into a mold of refractory glass, previously moistened.
• Allow to cool and remove from the mold on a tray.
