Do you even understand that the reason you're able to type BS (bullshit) like this onto a computer is because one of your ancestors tens of thousands of years ago figured out how to transform food by applying heat?
This is a common argument, and I understand it. Don't forget that the human body has evolved for at least 100s of thousands of years and every day this evolution is looking to be in the millions. Tens of thousands of years isn't much at all on the evolutionary time line.
The invention of cooking was a pivotal moment in humankind that allowed our brains to get bigger. Cooking unlocked the food, and basically pre-digested it. Go ahead and do an experiment where you eat raw meat for a year and see how that goes. Enjoy all the living parasites and living bacteria and the simple challenge of chewing.
The intelligence necessary to cook food was not unlocked by cooking food. Man was intelligent enough to master fire before all of these mysterious benefits of cooking came about. ALL of these statements are based on assumptions, and I like to stay away from those :)
It is no secret that you destroy the value of orange juice by cooking (pasteurizing) it. It is also no secret that cooking starchy vegetables (i.e. sweet potatoes) is beneficial. When you weigh the effort verse the nutritional reward, cooking starchy vegetables only becomes valuable when you're a human being trying to live out of your natural environment. That natural environment is clearly the tropics.
You have a bigger brain than the ancestors responsible for giving it to you. Use it.

Also fermented foods are very good for you. Most of the cells that comprise you aren't actually you. They are your microbiome. Fermented foods feed that part of you.
This is a good point. It does not, however, explain why it is that long-term fruitarians are thriving at life, reversing disease, breaking their fitness personal best records, and reporting happier and more fulfilling lives. I am a witness to this, and it is experience that you are lacking. Your lack of experience in this area doesn't give you much credit....
