The Victoria Peak and Victoria Harbour are most recommended to visit.
My families and I had a few days stay in HK. There are always many people no matter on the weekday or holiday. It is better to Victoria Peak on weekday or you would be in a queue for at least one hour.

And you can take time easily to Victoria Harbour. It is wide to accommodate lots of visitors.
