Gajar ka Achar
Here is a recipe for easy and mouthwatering Carrot Pickle. Gajar ka Achar is a famous North-India Pickle. I love this crunchy carrot pickle. You can store it for up to 1 Month.
Ingredients:
2 large carrots cut into 2 inches, lengthwise
1/4 cup mustard oil
1/2 teaspoon turmeric powder
1 table spoon fennel seeds
1 and 1/2 table spoon mustard seeds
1 table spoon dry mango powder/Amchoor
1 teaspoon red chili powder
1 tea spoon salt or to taste
1/4 cup mustard oil.
Method:
To make carrot Pickle first of all boil 3 cup water in a deep pan next put carrots in boiling water and cook for 2-3 minutes.
Remove carrots from the heat, drain all the water then spread carrots on the kitchen towel to let them cool and completely dry for an hour or two.
To make masala for Pickle, In a blender combine fennel, mustard and fenugreek seeds and grind them coarsely and keep it side.
When carrots gets dry, put them in a big bowl. Sprinkle above coarsely ground Fennel, Mustard and Fenugreek seeds powder, Turmeric powder,Mango/Amchoor powder and Mustard oil. mix well for 2-3 minutes, now cover and keep it aside for 1/2 an hour. Now add Salt and mix it well and put it in a container. Keep mixing it twice every day with dry spoon till it prepared.
Mouthwatering Carrot Pickle will be ready to eat in 24 hours and can be store for 1 month.
Note: Carrot should be completely dry before mixing spices in them else it would not last longer because moisture in the pickle can spoil Pickle.
