I love Granola, it can drive totally me crazy. it is the perfect treat for everyday life, for breakfast, as a snack or sprinkles in nice-cream or any sweet bowl. It goes with everything at any time (yes I am addicted I know).

I have been dreaming to make a RAW, GF, VEGAN version without ANY SUGAR only dates.
Well, after lots of tries, lots of fail here we go: A tasty raw granola, crunchy, full of fibre, vitamin, that will change any kind of bowl you are having right now. (it has changed for me)

I am actually so excited for you to give a try. You are gonna love it for sure !!

So this Raw Granola is made from a blend of GF oats and buckwheat

+ Buckwheat is my best-friend kitchen, I love it. Loaded with fibre, manganese, magnesium , copper , it protects and gives a huge boost to our immune system. The taste also is just so pleasant. As lots of seeds (Buckwheat is not a grain actually but a seed), we need to soak it before dehydrated to make easier to digest.

+ Gluten-Free oats are my little treasure since I lived in London. It is really hard almost impossible to find GF oats in France (never found) So I was never really able to eat this little grain. Oats are amazing, they have so many benefits. They deal with skin's problem, rich in antioxidants, help to regulate blood sugar, body weight. This little grain is just awesome, it has a low glycemic impact, contains a good source of energy and keep you full for longer. They are loaded of fibre that is why they fill you up for longer.

To sweeten. I blend an organic apple (juicy and fruity one) with some dates, the result an amazing sweet paste totally raw that goes really well with this granola.

In this basic recipe, I have been throw different nuts also for the flavour and texture but also for extra nutrients, healthy protein and fat. Of course, everything we put in a granola can change regarding the season and what we have at home. Just keep in mind to try to not add anything that contains sugar or is processed to keep a healthy raw plant-based mix. But of course, it is up to you.

This recipe requires a food processor, lots of nuts, some spices and a dehydrator. If you don't have a dehydrator DON'T STOP YOURSELF from making this awesome Granola. You can spread the mix on a baking paper and put it in an oven at the lower temperature possible. - This recipe can also be made not raw but actually cook at high temperature such as a regular granola for that you will need to put the mixture in an oven for 20 minutes or so at 180C -

INGREDIENTS

  • 75g Almond
  • 30g walnuts
  • 40g Pecans
  • 50g pecans
  • 150g GF Oats (regular works too of course)
  • 100g buckwheat (soaked overnight)
  • 1 tsp Cinnamon
  • pinch of vanilla powder
  • 50g of Raisins, goji berries (or any other dry berries)
  • 3 TBP home date paste
  • 1 organic Apple

METHODS

  1. Put the Almond in a food processor pulse for few seconds to obtain a flour.
  2. Drain the buckwheat and rinse it very well
    2.. Mix it with everything else by hand
  3. In your food processor, add the apple cut in small pieces and the dates and process until obtaining a smooth and sweet paste
  4. Then, mix the paste into the mix. Combine everything very well. It should be a bit sticky,
  5. Spread your granola on a baking paper
  6. Dehydrated at 42C for 8 to 10 hours

And here we go, a perfect Raw granola with no sugar, full of nutrient and vitamins . Perfect for your morning, it will help you to keep going all day long (or at least until the lunch).
