Vegetarian / Vegan style Chopped Liver Pâté Recipe


This recipe is my absolute favorite thing to do with mushrooms. I always loved pâté, and when I was younger my Grandma would always bring a bowl of real chicken liver pate that I loved so much with some crackers.

This is a vegetarian version and also vegan if you ommit the egg. It tastes just amazing and really embodies many of the flavours that Grandma's real chopped liver used to have. Very simple to make and with just a few ingredients. Don't miss this one!


Ingredients


  • Mushrooms
  • Onion
  • Walnuts / Mixed Nuts
  • Ghee or Butter or Olive Oil
  • Garlic
  • 1 egg (optional)
  • Gomazio (optional)
  • Garnish
  • Bread / Carrots / Celery / Crackers
  • How to make it

    1. Heat a pan with a little oil
    2. Cut onion into medium sized pieces and fry under medium high heat

    3. Fry until golden brown with some darker spots. You are aiming to get some nice burned areas to bring the flavour out.

    4. Add mushrooms roughly chopped and salt to taste and fry for around 10-12 minutes until dark and soft and caramalised.

     

    5. Add 2-4 tablespoons of water and rub against the dark spots on the pan to dissolve them.

    6. Set aside to cool

    7. Using a blender grind the mix into a paste. You can see here I am using a masitcating grinder, or slow grinder.


    8. Transfer the mix to a bowl and add the smushed boiled egg and mix well.

    9. Add salt and pepper to taste

    10. Plate it up with your favorite veggies or cracker and enjoy!

     

    I like it a bit warm but you may prefer to keep it in the fridge and eat it cold.

I had an idea for growing oyster mushrooms in bamboo with coffee grounds today. Then I see this. Coincidence... I think not. Lovely and delicious... can't wait to try. You either hit it out of the park or knock us back in our chairs with big smiles and full bellies :)

Yummmm, this is very good I can tell you, an invention Alex came up with one night when we didn't know what to eat.

yup! that time we had it with grilled layered aubergine, tomato sauce and mushroom pate.. That was amazing!

Looks fantastic, I've started to eat more vegan myself and I've noticed a great risen in energy.

Yum! We'll have to try this with frozen mushies but will let you know how it goes. That bread looks delicious, too.

yes go for it! that bread is a nice local american guy who make his sourdough with sprouted organic grains.. very tasty yes!
