Greek honey crunch creams!
These creams are sweet-over-the-brim cream icing filling sandwiched between two delicious honey and nut biscuits. Heres the recipe:
Ingredients:
2 1/4 of cups of self raising flour (Self rising flour)
2 Tsp of bicarbonate of soda
1/4 of a cup caster sugar (Superfine)
1/2 of a cup unsalted (sweet) butter, diced
finely grated rind of 1 large orange
1/2 of a cup greek honey
1/4 of a cup pine nuts or chopped walnuts
For the filling
1/4 cup unsalted (sweet) butter, at room temperature, diced
1 cup icing (Confectioners’) sugar, sifted
1 Tbsp Greek Honey
How to make:

Preheat the oven to 200C/400F/Gas 6. Line three or four baking sheets with baking parchment. Sift the flour, bicarbonate of soda and caster sugar into a bowl. Add the butter and rub in until the mixture resembles breadcrumbs. Stir in the orange rind.

Put the honey in a small pan and heat until just runny but not very hot. Pour over the dry mixture and mix to a mouldable dough.

Divide the dough in half and shape one half into small balls about the size of a hazelnut in its shell. Place the balls on the baking sheets, spaced well apart, and gently flatten. Bake them for six to eight minutes until golden brown. Leave to cool and firm up on the baking sheets. Use a palette knife (metal spatula) to bring the cookies to a wire rack and leave them to cool completely

Shape the remaining dough into 20 balls and dip one side of each ball in the chopped walnuts/pine nuts. Put the cookies, nut sides up on the baking sheets, gently flatten and bake for six to eight minutes till golden brown. Leave to cool and firm up a bit on the baking sheets then put them on a wire rack, still nut sides up, to cool completely.

To make the filling, put the butter, sugar and honey in a bowl and beat together until light and fluffy. Use the mixture to sandwich the cookies together in pairs using a normal cookie for the base and a nut coated one for the top.
