INGREDIENTS:
quarter cups okra, trimmed and split lenthwise (seeded if mature)
quarter cup olive oil
one and half cups red onions, minced
two cups tomatoes, peeled, seeded, and chopped
two teaspoons garlic, minced
two teaspoons ginger, minced
half teaspoon cardamom, ground
two jalapenos
INSTRUCTIONS:
In a medium pan, heat oil. Cook onions till light brown. Add tomatoes and bring to a boil. Lower heat, and stir in garlic, ginger, and cardamon. Add the okra and cook, uncovered, for twenty minutes. Add chiles and cook five more minutes.
