Stuffed Sweet Potatoe for Dinner! 🍅

One thing we really enjoy doing is cooking together. Whenever we have time, we jump in the kitchen and start mixing up ingredients to create delicious meals.
A couple hours ago, Tim and I had one of the most amazing dinners we've ever had.
We went shopping for a couple of items and improvised this incredibly delicious and healthy meal for dinner.
This is so easy and so good that it would be a crime not to share it with all of you.
Here's what you'll need:
For the protein we used chicken but you can make it vegan with quinoa or any type of beans.
-1/2 pound of shredded chicken
- 2 Sweet potatoes
-1/2 half bell pepper (we used green)
-1/2 broccoli
-2 garlic cloves
-Juice of one lime
Spices:
-Salt and cracked black pepper
-1 tablespoon coconut oil
-1 tablespoon olive oil
-1 teaspoon cumin powder
-1 teaspoon tumeric
-1 teaspoon parsley flakes
Cooking instructions:
Slice the sweet potatoes in half and place them in the oven at 450F with a splash of olive oil on top and under them (for about 20min) or until is soft enough.
Heat up a separate frying pan with coconut oil, add the bell pepper, garlic, lime juice and the shredded chicken until its gold and the broccoli is crunchy (about 15min)
Place the delicious chicken and veggies on top of your super soft and tender sweet potatoes and voilá!
