Simple Vegan Cucumber Avocado Sushi
Heya! I thought I would share a meal idea that I would consider a staple for the lazy, cheap & healthy. Yes, those 3 words can be put together.
You can really put ANYTHING you want into a sushi roll and call it a meal. Even fruit. You could also sneak some greens in there! I’ve got cucumber, ago & romaine in these ones :)
Ingredients:
Short grain rice
Nori sheets
Rice vinegar
1 tbs liquid sweetener
1 tsp salt
Avocado
Cucumber
Soy sauce/aminos(optional, for dipping)
I also love it with kimchi, pickled ginger or wasabi if I’m feeling fancy!
If I could, I would eat sushi everyday. They look absolutely delicious.
Seriously I would too. Sooooo good.
