Home Made Pancakes
INGREDIENTS
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1/8 teaspoon salt
1 tablespoon white sugar
2 cups buttermilk
1 egg
8 tablespoons butter, melted
1 tablespoons vanilla
½ teaspoon baking soda
DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Cook for app. 4 minutes until brown on both sides and serve hot.
Makes 10 to 12 pancakes.
Half and half or milk can be substituted for buttermilk.

I actually used a similar one however without vanilla/baking soda, I'll try adding vanilla (but leave the baking soda as it feels unnecessary).
