Today, I would like to share a healthy chicken soup recipe.

Chicken Soup With White Fungus & Vegetables

Ingredients


White fungus ∼ 20g
Chicken with bone ∼ 300g
Big Mushroom ∼ 2 pieces
Dried Oyster ∼ 3-5pieces
Red carrot ∼ 100g
Potato ∼ 50g
Red dates ∼ 8-10 pieces
Honey dates ∼ 2 pieces
Salt ∼ a bit

Preparation Steps

  1. Firstly, soak the white fungus in a bowl of water for half an hour or until soften. Wash and cut into small pieces, set aside.

  2. Wash and clean up the dried oyster, red dates and honey dates. Cut the red dates on a chopping board and remove the seeds, set aside.

  3. Peel off the skin of carrot, wash and cut it into thin slices on a chopping board. Then, wash and cut it into few things slices.

  4. On a chopping board, chop the chicken into few pieces. Wash and soak it in a bowl of boiled water for 15 minutes. Take out and dry it.

  5. Peel off the skin of potato, wash and cut it into few thick pieces in a chopping board.

Cooking method

  1. Boil 1.2 litres of water in a soup pot under high heat.

  2. When the water in soup pot is boiling, then add in all the white fungus,carrot, red dates, honey dates, dried oysters, potatoes and chicken.

  3. Re-boiled the pot of water under high heat, then turns to low heat after boiling and continue to cook under low heat.

  4. When the soup is half way cooked, press the honey dates to broken it, so that the dates taste is easily dissolve into the soup.

  5. Cook the soup for one and half an hour then can try the taste and add in a little bit of salt if want it to taste better.

雪耳蔬菜滋补鸡汤

食材

雪耳 ∼ 20克
鸡肉(带骨) ∼ 300克
大花菇 ∼ 2个
豪士 ∼ 3-5个
胡萝卜 ∼ 100克
马铃薯 ∼ 50克
红枣 ∼ 8-10粒
蜜枣 ∼ 2粒
盐 ∼ 少许

步骤

  1. 首先,将雪耳浸泡半小时至浸泡软为止。然后洗净再切小备用。

  2. 将豪士、红枣和蜜枣洗净,然后把红枣切开去掉种子备用。

  3. 将胡萝卜皮削掉洗净,在砧板上将它切成薄片状备用。

  4. 将马铃薯的皮削掉洗净,在砧板上将它切成小块状备用。

  5. 将鸡剁成块状,洗净。然后浸泡在一碗沸水中15分钟左右。取出沥干备用。

煮法

  1. 把1.2公升的水打入汤锅中,用大火把水煮沸。

  2. 待水煮沸后, 将雪耳、胡萝卜、红枣、马铃薯、豪士、蜜枣和猪骨一起倒入汤锅中。

  3. 待水再次煮沸时,就转小火继续熬煮。

  4. 在汤熬煮到一半时,就用汤匙把蜜枣压扁或成泥,好让汤蜜容易熬出味来。

  5. 将整锅汤熬煮一小时半左右就可以试味,再加入少许的盐调味。然后就可以熄火把汤取出端上桌慢慢享用了。
