Instructions:

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, according to package instructions. Reserve 1 cup of pasta water before draining the spaghetti.

While the spaghetti is cooking, heat a large skillet over medium heat. Add a drizzle of olive oil and the diced pancetta or bacon, and cook until crispy, about 5-7 minutes.

In a mixing bowl, whisk together the eggs, Pecorino Romano cheese, Parmesan cheese, minced garlic, salt, and pepper.

Add the reserved pasta water to the skillet with the pancetta or bacon and bring to a simmer.

Add the cooked spaghetti to the skillet with the pancetta or bacon and toss to coat with the sauce.

Remove the skillet from the heat and pour in the egg and cheese mixture, tossing quickly to coat the spaghetti. The heat of the spaghetti will cook the eggs and create a creamy sauce.

Serve the spaghetti alla carbonara immediately, garnished with additional grated cheese and freshly cracked black pepper.

Enjoy this famous Italian dish, which is known for its rich and creamy sauce, salty pancetta or bacon, and comforting flavors that make it a true comfort food classic.
