"Rolls" of pancakes with curd cheese and fruits (reciepe + photo)

Then we will prepare "rolls" of pancakes stuffed with curd cheese and fruits

Difficulty: 4/10

Ingredients:

For pancakes:

  • Milk - 500 ml,
  • wheat flour - 2 cups,
  • eggs - 3 pcs.,
  • water - 1 tbsp.,
  • sugar - 1 tablespoon,
  • salt - 0.5 tsp,
  • vegetable oil - 50 ml,
  • cocoa powder - 3 tbsp. (if you make chocolate dough).

For filling and decoration:

  • cream cheese (you can use ricotta, mascarpone, philadelphia or curd cheese of any brand without fillers) - 200 gr,
  • fruits for the season, availability and your taste (I have bananas, kiwi and mangoes),
  • chocolate - 100 gr,
  • cream - 3 tablespoons ...
  • butter - 2 tablespoons,
  • leaves of mint,
  • powdered sugar.

Preparation:

We prepare the dough for pancakes. In this recipe, we do not need lacy pancakes with holes, no matter how good they are. Therefore in the test there is no yeast, no kefir, no whey. Twist the filling better into fresh smooth silky thin pancakes.

Mix eggs with salt and sugar with a whisk or mixer.

Pour 1 cup of milk, gradually add the sifted flour and stir until smooth. If you want to make a chocolate dough, then mix the flour with cocoa powder.

We pour in another glass of milk and a glass of boiling water (a thin trickle with stirring).

Lastly, we pour in the vegetable oil, stir it and let it stand for about half an hour

Fry pancakes in a dry frying pan on both sides

Of this amount of test, about 20 pancakes are obtained. I did both usual and chocolate dough.

Fruits are mine, cleaned and cut into thin slabs

On the pancake (I pre-trimmed the edges) we spread a strip of cheese cake with a confectionery bag or a simple package with a cut off corner

We spread straws of fruit along the cheese

We twist the "roll"

For the filling of white pancakes, I mixed a portion of the cheese curd with chocolate paste

And some rolls made at once from two pancakes - white and chocolate (I do and so, and it - decided to show both ways)

We remove the resulting rolls in the refrigerator for about 30 minutes. And then cut with a sharp knife into pieces of 2 cm

While the "rolls" are cooling, we make chocolate icing:

Chocolate we break into pieces, add cream and melt over low heat with stirring. Remove from heat, add butter, stir until smooth

When serving, decorate the "rolls" with chocolate glaze (for this we put a slightly cooled mass in a bag and make a toothpick on the corner), mint leaves and sprinkle a little sugar powder.

All! You can eat yourself or surprise the guests)))

For sweet tooth - you can add a little cheese powder to the cream. I have enough sweets from chocolate glaze and sprinkle with powdered sugar.
