Potato Leek Soup
Ingredients
five large roma (plum) tomatoes
one (15.5 ounce) can garbanzo beans
one stalk celery
one cucumber
two green onions
two tablespoons finely chopped sweet onion
quarter cup chopped fresh parsley
half red bell pepper
half yellow bell pepper
half lemon, juiced1 clove garlic
one (46 fluid ounce) can tomato juice
oone teaspoon curry powder
one pinch dried tarragon
freshly ground black pepper to taste
one dash hot pepper sauce
Instructions:
In a large glass bowl, mix the tomatoes, garbanzo beans, celery, cucumber, green onions, sweet onion, parsley, red bell pepper, yellow bell pepper, lemon juice, and garlic. Add in the tomato juice. Season with curry powder, tarragon, pepper, and hot pepper sauce. Chill in the refrigerator at least two hours before serving.
