Clam Chowder
Ingredients
three cans minced clams
one cup minced onion
one cup diced celery
two cups cubed potatoes
one cup diced carrots
quarter cup butter
quarter cup all-purpose flour
one quart half-and-half cream
two tablespoons red wine vinegar
one and half teaspoons saltground
black pepper to taste
Instructions:
Drain juice from clams into a large sized pan over the onions, celery, potatoes and carrots. Putwater to cover, and cook over medium heat till soft.
Meanwhile, in a large sized, heavy saucepan, melt the butter over medium heat. Beat in flour till soft. beat in cream and mix constantly ill soft. Mix in vegetables and clam juice. Heat through, but do not boil.
Blend in clams just before serving. If they cook too much they get tough. When clams are heated through, mix in vinegar, and season with salt and pepper.
