How To Make Aloo Paratha - Indian Flat-Bread Stuffed With Spiced Potato and Served With Tahini Sauce. Vegan Friendly!

The humble but all time favorite Aloo Paratha is a famous Indian breakfast dish that can be eaten at any time of day! The combination of spiced potato stuffed inside of a fried paratha (similar to flatbread) makes for a winning combination that satisfies the hungriest appetite. Parathas originated in Peshawar and then spread all over the former northern parts of India, and you will find many small fast food shops making them all day long 365 day a year.

Stuffed parathas are slightly tricky to make because you need to roll out the dough until it is quite thin, but not so thin that it tears from the stuffing. It is a delicate balance of thickness. the amount of stuffing, and the dryness of the stuffing. If it is too wet it will definitely tear. Once you have practiced you will get the idea, and even though mine weren't perfect they taste just as good! A top tip is to put the stuffing in the fridge for a bit before rolling it out.

If you have never tried aloo paratha then definitely give this a try, I promise you will be delighted! I served this up with an unconventional tahini dip rather than the traditional yogurt and spicy pickled vegetables. The tahini does make it a very hearty meal, and defiantly works with the spices. I also like to also have a bit of siracha sauce on the side which is always well balanced by tahini.

What You Will Need


  • 3 - 4 potatoes cooked and mashed
  • 2 cups flour
  • 2 small onions finely chopped
  • 1 tbsp fresh ginger
  • & garlic or paste
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp garam masala
  • chili to taste
  • fresh lemon / lime
  • salt
  • coconut oil / ghee / butter
  • fresh coriander

 

How To Make It

  1. To make the dough start by heating some water until it is warm to hot.
  2. Mix the flour and salt in a large bowl and create a well in the center
  3. Add the water and mix well until a smooth ball is formed. It will be sticky but smooth like below. Then wrap it with cling-film and set aside.


  4. To make the stuffing heat some oil up in a pan until it is hot and add the onions and fry for a few minutes until translucent. Add salt and ginger and garlic.
  5. Shift the onions to one side and add a little bit more oil to the empty side. Then add all the spices and fry on hot for 10-20 seconds.



  6. Mix with the onions and fry for a few minutes.
  7. Add the potato and fry for a further few minutes



  8. Once you have fried it the mix should look something like the below image.


  9. Now take the dough and kneed it just a little. Then roll it out and cut equal sized pieces like this:



  10. Take a piece and roll it out flat. When you do this ensure that the center is thicker than the edges so that the stuffing doesn't break the dough.



  11. Add a little of the stuffing mix to the center of the paratha. Don't add too much, as I always do! You can see below what too much looks like:



  12. Bring all the edges up together to make a flower shape and pinch and twist the end like this:



  13. Very carefully flatten it by hand and gently roll it out with a rolling pin. Flip the paratha over and finish rolling on the other side. Once finished you should have a nice round stuffed paratha ready to fry!



  14. Heat a pan up with oil until very hot
  15. Fry the paratha on one side for a few minutes or until golden brown and then turn over and cook the other side
  16. Serve as whole parathas or triangle shaped.

I made two thicknesses by accident, and both were good.. but I think the thinner one was tastier but that is just my opinion. Here is how it looked!

Oh yes this is one of the most popular breakfast in north India. But I prefer its vegan version made in vegetable oil and eating with any vegan sauce or chatni instead of curd.
