Gratin Rice with Zucchini Light:

 Yield: 6 servings;

ingredients:

1 kg of zucchini;
1/3 cup (tea) of oil;
Salt, pepper and chopped parsley - the - kingdom to taste;
1 cup (tea) of rice;
3 cloves garlic, minced;
2 onions, sliced;
2/3 cup grated cheese;
3 eggs.

Method of preparation:

Cut the zucchini into horizontal slices, heat half the oil, add the zucchini, salt, pepper and cook for ten minutes stirring constantly.
Remove from heat, let cool and chop the zucchini into small cubes.
Separately, cook the rice in boiling water with salt for ten minutes, stirring sometimes.
Strain the rice in colander, rinse with cold water, let drain well and set aside.
Heat the remaining oil and saute garlic and onion.
In a greased refractory, combine the zucchini, onion braised, parsley, rice, grated cheese and season with salt and pepper.
Drizzle with the beaten eggs and bake in preheated oven at medium temperature for thirty minutes, then serve.
